With an upcoming wedding and a honeymoon to look good for, I have been all about clean eating. I was searching for a yummy but healthy dessert or snack for those after-dinner cravings. I came across these delicious looking muffins from Olives n' Wine which inspired me to create something similar.
Ingredients:
2 ripe bananas
1/3 cup peanut butter
1 tbsp cinnamon
2 cups oatmeal
1/3 cup dark chocolate chips (milk chocolate works too)
Directions:
Preheat oven to 350 degrees and place about 8-10 cupcake liners in muffin/cupcake pan
In a bowl, mash banana and peanut butter
Sir in the cinnamon, oatmeal and chocolate chips
Fill muffin liners about 3/4 - the top of the cupcake liners (depends how big you want them)
Bake in oven for 20-25 minutes
Allow to cool for a few minutes and Enjoy!!
They turned out great and are delicious! Next time, I might try them with some blueberries for a healthier alternative to regular blueberry muffins. Do you have any healthy muffin recipes?
