Engagement Pictures!
HERE THEY ARE!! Done by the lovely Kimber Ouellette at Two Sweet Photography! We got them done in Coos Bay, Oregon down by the beach. The beaches over there are so much different from the beaches here in Florida. Take a look and let me know what you think!

Healthy Protein Bars!
I know I promised my next post would be engagement pictures but I am waiting on an edit. I promise they are coming soon :)
In the mean time - Have you ever gotten that mid-morning hunger or that growling stomach. You are hungry but it isn't lunch time yet... so what do you eat? I have been searching and searching for a quick snack during that mid-morning hunger. Something that would get me through till lunch and thanks to Money Saving Mom I found it.
It is super easy and quick to make during that busy week.
Ingredients:

It is super easy and quick to make during that busy week.
Ingredients:
- 1 mashed banana
- 1 1/2 cups dry oatmeal
- 2 Tablespoons flax seed, ground
- 2-4 scoops protein powder
- 1/4 cup peanut butter/almond butter (I used almond butter)
- 1/4 cup shredded coconut
- 1/4 cup coconut oil (butter works fine too)
- 1/4 cup water
- 1 large chocolate bar or 1/2 cup chocolate chips (I used organic super dark chocolate)
1. Mix all ingredients except chocolate together well. It is normal if the mixture is sticky.
2. Line an 8×8-inch pan with foil and spread the mixture evenly in the pan.
3. Melt chocolate in the microwave for about 30 seconds or until completely melted. Be careful not to burn the chocolate!
4. Spread the melted chocolate over the mixture in the pan.
5. Place the pan in the freezer for at least 2 hours. (or until chocolate is hardened)
6. Cut into 10 -12 bars and put in sealed container and store in the freezer.
7. Thaw slightly before serving.
8. Enjoy!

Wedding Update!
I have been so busy planning my wedding that I haven't actually had a chance to post about it. Everything for the most part is done!
We set the date June 21st, 2015 and got save the dates!
Found the venue of our dreams and booked it! Grand Plaza BeachFront Resort - St, Petersburg, FL (They include everything from food to setup to the reception and ceremony sites. It even includes an open bar and the cake!)
Booked the flowers -Flowers By Design
Booked the DJ and a steel drum band! - Expert Productions
Booked the photography/videography (and a photo booth) - Elegant Imagery
Found the dress of my dreams! - Sorry can't post that ;)
Booked our pastor - Terry Scalzitti. We even had our first marriage counseling session which went great!
We just took our engagement pictures in Oregon thanks to Too Sweet Photography. Here is a sneak peak:

Easy Chicken Casserole
I was in the mood for a chicken casserole one night so I looked up Campbell's chicken casserole ideas and decided to go off of that. Since my fiance loves peppers and onions I decided to add to that recipe and make my own version.
Ingredients:
1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup or Campbell's Cream of Chicken Soup (I used cream of chicken)
1 cup water
3/4 cup uncooked rice or quinoa (I used quinoa for a healthier touch)
1/4 teaspoon paprika
1 pound skinless, boneless chicken breast halves
1/2 cup red onion
1 small green pepper
1/2 a can (15 1/4 ounces) of whole kernel sweet corn
Ingredients:
1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup or Campbell's Cream of Chicken Soup (I used cream of chicken)
1 cup water
3/4 cup uncooked rice or quinoa (I used quinoa for a healthier touch)
1/4 teaspoon paprika
1 pound skinless, boneless chicken breast halves
1/2 cup red onion
1 small green pepper
1/2 a can (15 1/4 ounces) of whole kernel sweet corn
Mix quinoa, soup, water, onion, pepper, and corn together and pour into a cake pan.
Cut the chicken breasts in half and place on top of the quinoa soup mixture. Sprinkle paprika on top of chicken.
Bake at 375°F for 45 minutes or until chicken is cooked through and quinoa/rice is tender. Let sit for 5-10 to cool and Enjoy!

Clean Eating Blueberry Muffins
Do you love muffins but also like eating healthy? Well I found the perfect combo with these clean eating blueberry muffins. I am not normally a big fan of blueberries but blueberry muffins I love! Perfect for breakfast or a yummy snack thanks to Little House Living!
Preheat oven to 350 degrees. Mix together the baking soda, salt, and flour. Then add in the dark brown sugar and mix well.
1 c. blueberries fresh or frozen
2 c. flour (I used half wheat flour and half white flour)
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. dark brown sugar (or sucanat if you have some)
1 c. milk (Any milk will do but I used Almond Milk - my fav!)
1/3 c. oil
Next add in the milk and oil and mix together.
Lastly, add in blueberries (Batter may turn a little blue from the berry juice). Lightly grease muffin pan or fill with cupcake liners. Fill about an inch form the top with the muffin mix.
Bake for about 20-25 minutes or until toothpick comes out clean. Enjoy!

Pingrey Puffs
Need a new chicken recipe? Or maybe a good football tailgate recipe?
Well I have one that is delicious with a hint of spicy! They are called Pingrey Puffs. They started out as just chicken and my dad decided to add a little buffalo for a Buffalo Bills Tailgate contest. It won and he had the chance to share it with all the Bills fans and now I am sharing it with you.
Well I have one that is delicious with a hint of spicy! They are called Pingrey Puffs. They started out as just chicken and my dad decided to add a little buffalo for a Buffalo Bills Tailgate contest. It won and he had the chance to share it with all the Bills fans and now I am sharing it with you.
Ingredients:
2 lbs of boneless cooked chicken
1-2 cups of buffalo sauce - depending on how spicy you want (I used Frank's Red Hot this time but normally I use Texas Pete)
1/ 4 cup blue cheese dressing (I used Wishbone but any dressing works)
8 oz of cream cheese or 1 cup of plain greek yogurt (healthier option)
2 tubes of 8 crescent rolls (16 rolls total)
Cut chicken into little bite size pieces and mix all ingredients except the crescent rolls. Set aside.
Preheat over to 350 degrees and then spray pans with cooking spray. Roll out the crescent rolls keeping two together so they are long rectangles.
Put a scoopful of chicken mixture on each roll, adding more until mixture is gone.
Roll up rolls by grabbing each corner and twisting at the top. Pour some buffalo sauce on top of each roll, if wanted. Put rolls in over for 20 minutes or until golden brown.
Take out of the oven and enjoy! (Be careful they may be hot and not just temperature hot!)
